This Comprete Breakfast

Breakfast is my favorite meal. It is the only truly American category of food. Right now, it’s 4am and I’m still awake, and I’m thinking about making breakfast. 

The finest breakfast on Earth, if you ask me, is the following:

  1. Two Eggs-In-a-Basket. My dad still makes these for me when I’m home. A staple of breakfast in the Gibson household, the egg-in-a-basket is a piece of buttered bread with a hole in the middle, into which you crack an egg, and then fry the whole mess up. Inexplicably, my dad’s early-20th-century Bay Area grandparents referred to this breakfast treat as a Chinaman’s Eye. Personally, I feel this is a misnomer; the eye of the bread is round like the eye of the white man, not the Chinaman. Anyway, borderline racist name or not, these things are fucking delicious.
  2. Meat. Right now I’m thinking a side of either bacon or my signature (white trashy) little fried up hotdog slices. Sausage is good too, and we have excellent local, sagey, fresh pork sausage down here in Charlotte. If you’re ever down in the area, try Neese’s. That shit is the good shit.
  3. Cheese Grits. Basically, take the delicious corn by-product that is grits, and give it the gift that keeps on giving; cheese. Ready access to grits is embarrassingly high on my list of “Reasons I Moved To The South”.
  4. Coffee. Specifically, cafe au lait, extra sugar (or Splenda® Brand Artificial Sweetener). Since it is 4am, I will probably bypass this for a glass of milk (because milk is the king of drinks and it makes you damn strong, too).

There are lots of great reasons why breakfast is considered the most important meal of the day. For me, cooking a meal like this reminds me of great weekend mornings during my childhood, where my dad would teach my sister and I how to make each part of what we were about to eat. Now, we are almost as good at it as he is (emphasis on almost).

One other great thing about breakfast foods is they are usually incredibly cheap to make. Rarely do I lack any of the ingredients for the scrumptious meal above.
